Best Caesar´s Salad Dressing Recipe

I love to have a huge Caesar´s salad, but not any. I´ve tried probably trillions of this type of salad and dressings for this famous dish, but Oh My! Isn´t it hard to find the perfect one? There is a restaurant here in Argentina called Kansas that serves the very best Caesar´s salad. Everything is perfect about it. So here we are, tons of people living in Buenos Aires trying to replicate the dressing from this place. And guess what? I´ve found a recipe that nails it!!! It´s so good that despite the never-ending list of sweet and great recipes in my blog, this one is the most popular.
This recipe contains raw egg so make sure they are fresh, nonetheless it has lemon juice and vinegar to acidify it. It´s the same as eating homemade mayonnaise. SO if you are pregnant or want to play safe, replace the egg, oil and lemon with store bought mayo.
WHAT YOU NEED:
(serves 2 or 3 a main course)
For the dressing:
- 1 anchovy (the ones in olive oil)
- 1 pasteurized (if possible) egg
- 1/2 cup of vegetable oil
- 1 tsp alcohol vinegar
- 1 tsp lemon juice
- 1 tsp mustard
- 1 garlic clove
- 2 drops of Worcestershire sauce
- 2 tbs grated cheese
- Salt - optional
For the salad:
- 2 romaine lettuce
- 1 big chicken breast or 2 small ones
- 3 or 4 slices of bread for croutons.
- Grated cheese
- Pepper (optional)
- Tabasco sauce
WHAT TO DO:
1. Pour all the ingredientes for the dressing in a food processor. Process until the dressing is creamy and a little bit thick. If you want to avoid the raw egg, you can replace the egg, oil and lemon juice with mayo. Process the remaining ingredients, add the mayo, process to blend and enjoy.
2. Wash the lettuce, leaf by leaf! If you buy the pre-wash ones, wash them again.
3. For the croutons, an easy way to do them is to cut the bread in squares, place them on an over tray and bake them. Another way is to coat with a mixture of vegetable oil and minced garlic the oven tray and bake.
4. For the chicken breast, cut the meat in cubes and place them in a skillet coated with a little bit of oil. We cook the chicken and add 2 or 3 drops of tabasco sauce. When ready, reserve.
5. Toss the cooked chicken with the chopped lettuce and pour the dressing. Add the croutons and grate fresh Parmesan on top. Enjoy!
