Coconut Pound Loaf Cake Recipe
As soon as I saw the recipe for this coconut pound loaf cake at Tres Tenedores blog I knew I had to try it. Originally, the recipe is from another blog named Cocinar en casa. My first try was a huge success and it is so easy to make you can prepare it with a fork if you have no hand mixer. It is homemade so it is healthier than store-bought and it is delicious and that is why you need to do it right now.
WHAT YOU NEED:
80g butter at room temperature
150g sugar
1 egg yolk
2 eggs
1 tsp vanilla extract
100g shredded coconut
125g all purpose flour
1 tsp baking powder
80g cream cheese
FOR THE CRUMBLE MIX WITH A FORK:
-30g shredded coconut
-40g all purpose flour
-40g sugar
-40g butter
WHAT TO DO:
1- Preheat oven to 170C.
2- Cream butter and sugar.
3- Add yolk and eggs, one at a time.
4- Add the vanilla extract.
5- Pour dry ingredients, mix until well incorporated.
6- Add cream cheese. Mix.
7- Pour mix on buttered bundt or loaf pan.
8- Toss crumble on top.
9- Bake at 170C for 50 minutes. The knife must come out clean.
10- Cool and enjoy.
