Easy Gluten Free Cheese Rolls (or Chipa) Recipe





This week we created a YouTube channel, COOK AND SHOUT, and this was our first recipe (Deliciosos Chipa). I invite all of you to check the recipes I´ll be uploading, hopefully, each week.

The chipa is a gluten free kind of cheese roll made with tapioca flour popular in Paraguay and northeast of Argentina . There are many different versions and recipes but it is usually enjoyed with a mate. They are very easy to make and you can freeze them and delight yourself with a fresh cheese roll every now and then. They taste better hot or warm.


WHAT YOU NEED:
- 500g (17.6oz) tapioca flour
- 4 eggs
- 70g (2.5oz) butter
-10 tbs milk
- 250g (8.8oz) grated sandwich cheese such as Gouda
-150g (5.3oz) grated mozzarella cheese (not the fresh fior di latte, but the greasy mozzarella)
-50g (1.8oz) store bought grated pasta cheese (here we call it Reggianito)
- 1 1/2 tsp salt
- 1/2 tsp baking powder

HOW YOU DO IT: 

Preheat Oven at 220C/428F
  1. Stir in a big bowl: tapioca flour, salt and baking powder.
  2. In a medium bowl whisk eggs, milk and grated butter. Combine dry and wet ingredients adding all the cheese together. 
  3. Knead dough and make golf size balls.
  4. Bake for about 10 minutes or until slightly golden. 
You can freeze the rolls up to 3 months.
